Recipe – Pear Frangipane Cake
Serve this frangipane cake cold with a cup of coffee or serve warm with cream or custard as a dessert.

Make 1 cake

100g Butter
100g Caster sugar
2 Eggs
100g Doves Farm Organic Self Raising White Flour
2 tbsp Lime juice
100g Ground almonds
3 ripe Pears
1 tbsp Demerara sugar
Butter, for tin

Equipment: 20cm/8” round cake tin + Large mixing bowl
Note: 1 tsp = 1 teaspoon茶匙 / 1 tbsp = 1 tablespoon湯匙

1. Pre-heat the oven.
2. Rub some butter around the inside of 20cm/8” round cake tin or insert a baking liner.
3. Put the butter and sugar into a large bowl and beat together until light and fluffy.
4. Beat in the eggs one at a time.
5. Sieve the flour into the bowl and mix well.
6. Add the lime juice and ground almonds and stir to combine.
7. Tip the mixture into the prepared tin and smooth the top.
8. Peel, core and slice the pears and arrange them over the top of the cake.
9. Scatter the demerara sugar over the top.
10. Bake for 50-55 minutes.

190℃, Fan 170℃, Gas 5
