Recipe - Traditional White Bread

Recipe - Traditional White Bread 0

Make this recipe for one loaf or times it by three and you will have enough bread to freeze for a later date. This basic recipe can easily be adapted to the recipes for flavoured breads.

Ingredients:
500g Doves Farm Organic Strong White Bread Flour or
500g Doves Farm Organic White Spelt Flour

1 tsp Quick Yeast
1 tsp Sugar
300ml Water
1 tbsp Vegetable Oil
1/2 tsp Salt

Note:
1 tsp = 1 teaspoon茶匙
1 tbsp = 1 tablespoon湯匙


Method:
1. In a large bowl mix together the flour, salt, quick yeast and sugar.
2. Carefully measure the water and roughly mix it into the flour.
3. While the dough is still lumpy add the oil and knead well until it feels smooth and pliable.
4. Leave the dough in a bowl covered with a tea towel, in a draught free place, for the dough to double in size (This should take about an hour). To make a quick bread omit this stage and proceed straight to step 6.
5. Turn the dough out onto a floured surface and knead the dough firmly for several minutes.
6. Shape the dough and put it into an oiled 1kg / 2lb bread tin or place it on an oiled baking sheet.
7. Cover & leave dough to rise for about 25 minutes in a warm place.
8. Bake in a preheated oven for 35/40 minutes.

Temperature & cooking time:
220°C/Fan200°C/425°F/Gas 7 for 35/40 minutes

Recipe - Red Pepper and Onion Pizza

A great dish for supper and, if you make extra dough, one that can combine well with a bread making session.

Ingredients:
300g Doves Farm Organic Strong Wholemeal Bread Flour or
300g Doves Farm Organic Strong White Flour or
300g Doves Farm Organic Wholemeal Spelt Flour or
300g Doves Farm Organic White Spelt Flour

200ml Water
2 tbsps Olive Oil
1 tsp Quick Yeast
1/2 tsp Salt
1 tbsp Brown Sugar
1 tbsp Mixed Dried Herbs
1 Onion
1 Red Pepper
10 Olives
75g Cheese
1 tbsp Tomato Puree
1 tin Chopped Tomatoes
1 tsp Sugar

Note:

1 tbsp = 1 tablespoon湯匙

Method:
1. If using made up bread dough roll into 18x25cm / 7x10"rectangle and go to step 7.
2. To make up a dough mix together the flour, salt, quick yeast and sugar.
3. Add the water and roughly mix it into the flour.
4. While the dough is still lumpy add the olive oil and knead well until it feels smooth and pliable.
5. Leave the dough covered with a tea towel, in a draught free place, for it to double in size. (This should take about an hour)
6. Knead the dough then roll it into a 18x25cm / 7x10"rectangle.
7. Put the dough on an oiled l 18x25cm/7x10" baking tray.
8. Mix together the chopped tomatoes, tomato puree, sugar and herbs.
9. Spread this over the dough.
10. Slice the onion into rings and the red pepper into strips.
11. Place these on top of the sauce and decorate with olive.
12. Slice the cheese and arrange it on top.
13. Leave the dough to rise for 20 minutes.
14. Bake in a preheated oven for 25/30 minutes.

200°C/Fan180°C/400°F/Gas 6 for 25/30 minutes

Recipe - Ciabatta

The distinctive taste and smell of virgin olive oil is the essential characteristic of an aromatic ciabatta loaf.

Ingredients:
250g Doves Farm Strong White Bread Flour / White Spelt Flour
1/2 tsp Salt
1 tsp Quick Yeast
1 tsp Sugar
150ml Water
4 tbsps Olive Oil

Note:
1 tsp = 1 teaspoon茶匙
1 tbsp = 1 tablespoon湯匙

Method:
1. In a large bowl mix together the flour, salt, quick yeast and sugar.
2. Add the water and roughly mix it into the flour.
3. Knead well until the dough feels smooth and pliable.
4. Leave the dough covered with a tea towel, in a draught free place, for it to double in size. (This should take about an hour).
5. Put the dough back into the bowl with 4 tablespoons of olive oil.
6. Press, fold and turn the dough until the olive oil has been incorporated.
7. Shape the dough into a long oval and place it on an oiled baking sheet.
8. Leave dough to rise for about 30 minutes in a warm place.
9. Bake in a preheated oven 25/30 minutes.

200°C/Fan 180°C/400°F/Gas 6 for 25/30 minutes
